Budyn or Plantain porridge made of coconut milk, butter and plantain flour.
We’ve been to the African shop in our town. They sell all kinds of things, some unfamiliar to us, some we already use in our kitchen like gari, plantains, cassava, eddoes…
Looking for banana flour (not sure if it exists!) we gave a try to a plantain flour. I tried adding to pancake mix first but I was not impressed.
Encouraged by my mother in law to try cooking a breakfast for the baby with it, I came up with this recipe. Budyń I called it, reminding me of a milky custard style dish of my childhood. The result was very good. Sweetish (coconut milk with plantain combination), rich, very velvety to start a day with, mixed with banana or other soft fruits – delicious. I had Budyń this the morning, third day in a row.
- 1 cup of coconut milk
- 1 teaspoon of butter
- 2 tablespoons of plantain flour
Bring it all up to slow boil, stirring constantly and it’s ready to serve. You can have as is or add maple syrup/ fruits. Each way, it tastes lovely.
Nearly as good as the childhood taste!
